Some products are more environmentally friendly than others, and it is your job to make sure that the products that you stock are as ecologically friendly as possible. 

Maintaining a brand image about eco-friendliness is much easier when you practice what you preach.

Take time to learn about the reputation of any of your manufacturers and suppliers as their reputation can impact yours.

Create a protocols list for how people should discard waste products, damaged packaging, and even how much they print. Create a policy that is easy to follow; you can even consider adding it into an employee handbook that gets given to each of your new  employees.
